The problem I have, though, is that bacon is already a smoked product, so while it may be good baked or even lightly smoked on a grill, putting it in a smoker may be a bit too much. There is such a thing is an over smoked product.
It is possible to get it non-smoked. Not sure how common it is in a market, but you can go to a butcher and order/get it. And that food of yours looks terribly tasty.
